Diversos eventos celebrados en diferentes capitales tienen como protagonista a estos veh\u00edculos que conforman una <strong>tendencia gastron\u00f3mica<\/strong> que va ganando adeptos en Espa\u00f1a.<\/span><\/p>\n<h2 id=\"que-es-un-food-truck\"><span style=\"color: #000000;\"><strong>\u00bfQu\u00e9 es un food truck?<\/strong><\/span><\/h2>\n<p><span style=\"color: #000000;\">Tal y como lo define la <a style=\"color: #000000;\" href=\"http:\/\/www.fundeu.es\/\" target=\"_blank\" rel=\"noopener noreferrer\">Fundaci\u00f3n del Espa\u00f1ol Urgente<\/a>\u00a0(Fundeu), el anglicismo <a style=\"color: #000000;\" href=\"http:\/\/www.fundeu.es\/?s=food+truck\" target=\"_blank\" rel=\"noopener noreferrer\">food truck <\/a>puede traducirse como cami\u00f3n de comida, camioneta de comida o puesto de comida ambulante\/itinerante. M\u00e1s espec\u00edficamente, este t\u00e9rmino es utilizado para referirse a los puntos m\u00f3viles de venta de cocina elaborada, que en ocasiones se establecen durante \u00a0meses o semanas en ferias gastron\u00f3micas. \u00a0<\/span><\/p>\n<p><span style=\"color: #000000;\">En espa\u00f1ol se recurre al t\u00e9rmino <strong>gastroneta <\/strong>para definir este tipo de negocio, acr\u00f3nimo de gastronom\u00eda y camioneta.<\/span><\/p>\n<p><span style=\"color: #000000;\">Con una inversi\u00f3n menor a la necesaria para abrir un restaurante, y unos clientes que buscan nuevas experiencias, el movimiento <strong>food truck<\/strong> va aumentando seguidores, provocando que la oferta de maquinaria de Hosteler\u00eda y las empresas instaladoras del sector hostelero abran sus miras hacia este tipo de negocio.<\/span><\/p>\n<h2 id=\"la-distribucion-del-espacio-en-la-gastroneta\"><span style=\"color: #000000;\"><strong>La distribuci\u00f3n del espacio en la gastroneta<\/strong><\/span><\/h2>\n<p><span style=\"color: #000000;\">Uno de los aspectos m\u00e1s importantes y significativos a tener en cuenta al desarrollar este tipo de proyecto es el reducido espacio de trabajo del que se dispone. Todo depende de lo que vayas a servir. Un ejemplo de ello es la obligaci\u00f3n de disponer en estos veh\u00edculos de muebles de acero inoxidable en la zona de manipulaci\u00f3n de alimentos, un lavabo con agua fr\u00eda y caliente, un dispensador de jab\u00f3n, separar la zona de frio del resto, \u00a0tener suelo sanitario, para evitar el paso de la humedad, y forrar las paredes del veh\u00edculo en acero inoxidable.<\/span><\/p>\n<p><span style=\"color: #000000;\">Una vez acondicionada, debemos equiparla de acuerdo a la actividad del negocio. El escaso tama\u00f1o del interior de los food trucks supone un inconveniente a la hora de escoger el equipamiento adecuado, por lo general las medidas m\u00e1ximas suelen ser de 600 mm de fondo.<\/span><\/p>\n<p><span style=\"color: #000000;\">Un food truck deber\u00e1 estar dotado de:<\/span><\/p>\n<h3 id=\"zona-de-extraccion\"><span style=\"color: #000000;\"><strong>Zona de extracci\u00f3n<\/strong><\/span><\/h3>\n<p><span style=\"color: #000000;\">Ahorrar espacio y mantener la funcionalidad de la <strong>campana extractora<\/strong> es fundamental para un food truck. Por este motivo es aconsejable el asesoramiento de profesionales del sector, y en su caso la fabricaci\u00f3n de una campana hecha a medida.
