Somos 3 mexicanos quienes lideramos el negocio. Yo gestiono la parte de fuera: caterings, eventos, festivales\u2026 y los otros dos socios lideran el restaurante, nuevo negocio y el proyecto de expansi\u00f3n del mismo.\u00a0<span id=\"more-3742\"><\/span><\/p>\n<p>Desde hace a\u00f1os nos rondaba la idea de crear una foodtruck para llevar nuestra cocina al exterior, como se hace en M\u00e9xico: tacos aut\u00e9nticos en la calle. Por su postura, sosteniendo sobre sus manos y vientre un recipiente, serv\u00eda como espacio de ofrendas.<\/p>\n<h4 id=\"cual-es-vuestro-plato-estrella\"><strong>\u00bfCu\u00e1l es vuestro plato estrella?<\/strong><\/h4>\n<p>El taco que m\u00e1s vendemos es la Gringa, que consiste en una tortilla de trigo, con queso tostado a la plancha y carne de cerdo adobada. Aunque suelen gustar todos. La opci\u00f3n vegetariana que m\u00e1s gusta es la de champi\u00f1ones al chipotle, con un toque picant\u00f3n que encanta. En general, solo vendemos los tacos que se venden en la carta del local. Nos desmarcamos completamente del Tex-Mex, y nos enfocamos en lo que se llama Mex-Mex, es decir, aut\u00e9nticamente mexicano.<\/p>\n<p>Tenemos m\u00e1s de 15 a\u00f1os trabajando con la cocina mexicana en Galicia y conocemos muy bien c\u00f3mo hacer buena gastronom\u00eda de nuestro pa\u00eds. Adem\u00e1s, nuestra foodtruck es muy c\u00f3moda, incluyendo una mesa para comer los tacos ah\u00ed mismo, de pie.<\/p>\n<p><strong>\u00bfC\u00f3mo te imaginas el mundo del Street Food en 5 a\u00f1os?<\/strong><\/p>\n<p>En una de las conferencias que se dieron en el FoodTruck Forum, de este a\u00f1o en Bilbao, se habl\u00f3 de que el crecimiento del sector estaba estanc\u00e1ndose y que solo se abrir\u00edan paso los mejores. Y estamos muy de acuerdo con esa visi\u00f3n.<\/p>\n<p>Hemos conocido a muchos muy buenos foodtruckers que hacen las cosas bien y que cumplen con sobresaliente en todas las normativas que nos piden. El p\u00fablico cada vez es m\u00e1s exigente y piden algo m\u00e1s, por lo que visualizamos mejores eventos y veh\u00edculos foodtrucks. Esperamos que se abran m\u00e1s espacios d\u00f3nde poder comer street food de calidad.<\/p>\n<p>Como mexicanos, estamos acostumbrados a la comida de la calle. En todas las ciudades de M\u00e9xico hay puestos y veh\u00edculos de tacos, hamburguesas, hot-dogs y un largo etc\u00e9tera, aunque no necesariamente con foodtrucks. De hecho, una de las cosas que m\u00e1s nos llam\u00f3 la atenci\u00f3n de la hosteler\u00eda en Espa\u00f1a era la carencia de espacios street food. Ahora, parece que se empiezan a abrir huecos y cada vez hay m\u00e1s oportunidad. Apenas llevamos meses con el foodtruck, por lo que ser\u00eda muy presuntuoso dar los consejos nosotros. Lo que s\u00ed podemos hacer es trasladar los que nos han dado otros compa\u00f1eros food ruckers que hemos encontrado por el camino:<\/p>\n<ul>\n<li>Excelencia; hacer las cosas bien hechas, tanto en imagen como en producto.<\/li>\n<li>Diferenciaci\u00f3n; buscar un plato, una comida, un sabor, algo que te haga diferente, en el que nadie te iguale.<\/li>\n<li>Y por \u00faltimo, sonre\u00edr. Hay dudas, horas largas, posibles conflictos, pero mejor encararlo con una sonrisa, porque ese estado de \u00e1nimo se traslada al producto, a tu imagen y a tu veh\u00edculo . Y eso lo perciben los clientes.<\/li>\n<\/ul>\n<h4 id=\"alguna-anecdota-que-os-haya-ocurrido-en-algun-evento\"><strong>\u00bfAlguna an\u00e9cdota que os haya ocurrido en alg\u00fan evento?<\/strong><\/h4>\n<p>Hay varias, porque cada evento tiene muchas particularidades. Y aunque, como repito, no tenemos muchos a\u00f1os de experiencia, s\u00ed que podr\u00edamos destacar un evento en el que nos pidieron a los foodtrucks que estuvi\u00e9ramos hasta entrada la madrugada. Y sobre las 2 de la ma\u00f1ana se form\u00f3 una batalla campal enfrente de nuestro veh\u00edculo, pu\u00f1etazos y patadas para todos lados. As\u00ed que cerramos todo y terminamos atendiendo a la gente por una puerta lateral.
